Broccoli Salad

1 head broccoli
6-8 slices cooked crumbled bacon
1/2 cup chopped red onion
8 oz sharp cheddar cheese cut in small chunks
1 cup mayo
2 T white vinegar
salt and pepper
my original recipe called for; 1/4 c sugar, (but i cut back to 1/8 c or often substitute truvia), 1/2 cup cherry tomatoes halved( but i skip these also because i like to make up a full recipe and keep in the refrigerator for the week and it is a good low carb high protein side with dinner). i also skip the raisins the recipe calls for to keep the carbs low as well.

trim the broccoli, mix the mayo and vinegar. combine everything and refrigerate. better when it gets to marinate in the frige for at least a few hours.
